300 g canned tuna in sunflower oil drained
500g boiled potatoes mashed with a knob of butter and 10cl milk
2 egg yolk
2 medium onions chopped finely
3 table spoons of cut fresh coriander leaves
3 table spoons of cut fresh springs onions
3 green chillies finely chopped
1 red pepper finely chopped
1 table spoon of chopped dill leaves or flat parsley
grated mild cheddar cheese
salt and pepper to taste
oil for frying
mix the fish flakes, potatoes, egg, greens leaves, chillies , onions and all ingredients in a bowl except the breadcrumbs. mix well add salt and pepper to taste, make 10 equal balls and flatten then to make them slightly flat, bont press to hard .
leave the cake in the refrigerator for 30 mins to cool.
heat little oil in a non stick frying .
take the fish cake out of the fridge and roll then in the bread crumbs ans shallow fry then in hot frying pan untill well well on both sides.
serve with a tomato and date chutney or spicy home made mayonaise.
