For swiss roll
-4 eggs
-100g castor sugar
-100g plain flour
-1 tsp vanilla essence
For rolling
-jam
For fruit triffle
-1 mixed fruit can
-300 ml milk
-2 tsp cornflour
-3 tsp sugar
-1 nestle cream can
Swiss roll
- whisk eggs and castor sugar over a pan of shallow water until fluffy
- add vanilla essence
- sieve flour into mixture and fold with a sppon
- pour the mistures in a greased, line baking tray
- bake for 10-15 min on middle shelf at 180c
when ready, keep a moist cloth on a table, sprinkle sugar on, and unmould the swiss roll
- spread the jam in it
- roll and cut into slices
- place in a bowl
For fruit triffle
- blend cornflour with a littlemilk
- cover and keep aside
- heat the remaining milk in a sauce pan
- add blended cornflour gradually
- cook on low heat until thickened
- add sugar and 2 tsp of syrup from the canned fruit
- cool the mixture
- chop the fruits
place the fruits in the bowl of swiss roll, pour the cold mixture and put in fridge.
serve chilled.
